Delicious Magnesium-Rich Gluten-Free Buckwheat Porridge

Despite having 'wheat' in its name, buckwheat is actually a seed and sometimes referred to as a pseudo-grain or ancient grain. It is naturally gluten-free, is a great source of fibre and protein, is rich is anti-oxidants and is a source of magnesium. With the addition of KARUAH ACTIVE MAGNESIUM this is a super healthy, delicious and magnesium-rich breakfast or snack.

Serves 2

Ingredients:

  • 150g raw buckwheat (soaked overnight in 6 cups water and 1t apple cider vinegar, then rinsed and drained in morning)
  • 1 generous teaspoon coconut oil
  • 300ml nut milk or 270ml tin coconut milk plus 30 ml water
  • 1 Tbls sweetener of choice eg honey, maple syrup, rapadura sugar, coconut nectar (double if you have a sweet tooth)
  • pinch cinnamon
  • pinch ground cardamon
  • 1/2 tsp vanilla essence
  • pinch salt
  • 1 T Karuah Active Magnesium for topping
  • Frozen wild berries for topping

Directions:

  • Melt coconut oil in small saucepan over low - medium heat. Add drained buckwheat and stir until slightly golden (about 5 mins). Add milk. Stir and simmer gently for 15 mins or until milk absorbed. Remove from heat and add sweetener of choice and spices, mixing well. Serve with Karuah Active Magnesium and wild berries.
