Healthy Green Goddess Dressing Recipe

This is an incredibly versatile, delicious, healthy and phytonutrient dense dressing recipe that you can use on almost any meal. Use to dress a kale salad (as above) or any meal that you want to take to the next level. Anchovies are a great source of omega-3 essential fatty acids but vegans can substitute savoury yeast flakes.

Makes roughly 1½ cups 

Ingredients:

1 cup raw cashews, soaked in water for 1 hour then drained and gently rinsed.

¼ cup capers

2 lge or 4 sml anchovies (substitute option -  1 T savoury yeast flakes)

2 lge handfuls of fresh green herbs - I like parsley, dill and basil

1 t Dijon mustard

½ cup filtered water, plus more if needed

1/3 cup extra virgin olive oil

Zest of 1 lemon (preferably organic)

2 T apple vinegar or lemon juice

1 t authentic maple syrup or 1/2 t monk fruit sugar

1 t sea salt

Ground black pepper to taste

Directions:

Place all of the ingredients in a blender or food processor. Gently blend for 1-2 minutes, or until silky smooth. Use a little more or less or less water, depending on your desired consistency.

I start with about ½ cup and go from there. 

Pour into an air tight glass jar (eg mason jar) and store in the fridge for up to 5 days.
