Too Easy Banana & Pear Muffins

This recipe has no added sweetener - just the fructose from the fruit. I scaled up 3 times to get this dozen in large baking cups:

Instructions:

Pre-heat oven to 180 degrees.

In one bowl mix:
- 1 cup spelt flour, 1 tsp baking powder, 1/4 tsp fine sea salt, 1/4 tsp ground cinnamon
In another bowl mix:
- 1 Tbsp almond milk (or dairy if you prefer), 1 egg, 1 very ripe and mashed banana, 1/2 cup macadamia oil

Pour the wet mix into the dry mix. Add 1 chopped pear (roughly 1-2cm pieces) and stir through.


Bake for 20 mins or so.

When I scaled up 3 times I needed to bake for 35 mins.
